Cooking Canada goose in a Crock-Pot can result in a delicious, tender dish. Here’s a simple recipe idea for slow-cooked Canada goose:

Ingredients

  • 2 Canada goose breasts
  • 1 cup chicken or beef broth
  • 1 cup red wine (optional, for flavor)
  • 1 onion, chopped
  • 2-3 carrots, sliced
  • 2-3 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1-2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 2 bay leaves
  • Potatoes (optional, for a heartier meal)

Instructions

  1. Prepare the Goose: Cut each breast into bite size pieces.  Sear each side on high in olive oil. 
  2. Layer Ingredients: Place the onion, carrots, celery, and garlic in the bottom of the Crock-Pot. Lay the seared goose on top. 
  3. Add Liquid and Seasonings: Pour in the broth and wine (if using). Add thyme, rosemary, and bay leaves.
  4. Cook Slowly: Cover and cook on low for 6-8 hours or until the meat is tender and easy to shred.
  5. Serve and Enjoy: Remove the bay leaves before serving. You can serve the dish as is or with potatoes, rice, or noodles of your choice.
